World of Girls Journey --
The girls decided to "change the story" of their peers eating unhealthy snacks. They made recipe cards of the healthy snacks they've made during Girl Scout meetings and passed them out at school. Here the Brownie taste tested and approved healthy snacks.
Thai Lettuce Wraps
Lettuce Leaves
Rice
Carrots
Celery
Hoison Sauce
Chop the celery. Grate the carrots. Cook rice. Spread one
teaspoonful of hoison sauce around on a lettuce leaf. Add one large serving
spoonful of rice on top of sauce. Sprinkle grated carrots and chopped celery on
the rice. Wrap lettuce leaf around rice and vegetables.
Hummus
1 15 oz can chickpeas, rinsed and drained
1/3 cup tahini (sesame paste)
6 tablespoons lemon juice
2 cloves garlic, minced (1 teaspoon jarred garlic)
1 teaspoon salt
Puree all ingredients in a food processor until smooth. Add
a little water if hummus is too thick.
Serve with pita chips and carrot sticks.
Black Bean Dip
One 15 ounce can black beans, rinsed and drained
6 tablespoons salsa
1 ½ tablespoons lime juice
1 clove garlic, minced
Puree all ingredients in a food processor until smooth.
Serve with tortilla chips.
Trail Mix
Dry cereal such as Rice Chex or Cheerios
Mini pretzels or pretzel sticks
Dried cranberries or raisins
M&Ms
Add 1 cup dry cereal, ½ cup pretzels, 1/3 cup dried fruit,
and ¼ cup M&Ms to small plastic bag. Close top of bag and shake gently to
mix.
